Curry Laksa

Curry Laksa is a traditional Malaysian noodle soup dish made from a spicy coconut-based curry broth. Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon minced fresh ginger
  • 2 tablespoons red curry paste
  • 1 (14.5 ounce) can coconut milk
  • 1 (14.5 ounce) can chicken broth

Directions

  • Step 1
    Heat the oil in a large pot over medium heat. Add the garlic and ginger and cook, stirring, for 1 minute.
  • Step 2
    Stir in the curry paste and cook for 1 minute more. Pour in the coconut milk and chicken broth and bring to a simmer.
  • Step 3
    Add the fish sauce, sugar, and lime juice and stir to combine. Simmer for 10 minutes, stirring occasionally.
  • Step 4
    Add the noodles and simmer for 5 minutes. Stir in the shrimp, bean sprouts, and green onions and simmer for 3 minutes, or until the shrimp are cooked through.
