Malaysian Char Kway Teow

Malaysian Char Kway Teow is a popular dish consisting of flat rice noodles stir-fried in light soy sauce with garlic, chilli, prawns, cockles, bean sprouts and Chinese sausage. It is a popular dish throughout Malaysia, especially in the northern states of Penang, Kedah, and Perak. Char Kway Teow is usually served with a side of chili sauce, with a squeeze of lime for extra flavor. This simple yet delicious meal is a popular street food item, and can also be found in many restaurants throughout Malaysia.

Ingredients (2 Persons)

  • 4 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • 2 Chinese sausages, sliced into thin strips
  • 2 eggs, lightly beaten
  • 2 cups flat rice noodles
  • 1/2 cup bean sprouts
  • 1/4 cup chopped green onions
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 2 teaspoons sesame oil
  • 1/4 teaspoon ground white pepper

Directions

  • Step 1
    Heat the oil in a wok or large skillet over medium-high heat. Add the garlic and shallot and cook for 1 minute.
  • Step 2
    Add the Chinese sausages and cook for 2 minutes, stirring occasionally.
  • Step 3
    Pour in the eggs and scramble until cooked through, about 1 minute.
  • Step 4
    Add the rice noodles, bean sprouts, and green onions to the wok. Cook for 2 minutes, stirring to combine.
  • Step 5
    Stir in the soy sauce, fish sauce, sugar, sesame oil, and ground white pepper. Cook for an additional 2 minutes, stirring to combine.
  • Step 6
    Serve the char kway teow hot, topped with additional green onions if desired.
