Vietnamese Banh Xeo
Banh Xeo is a traditional Vietnamese savory cake made from rice flour, turmeric powder, and filled with strips of pork, shrimp, and bean sprouts. Ingredients (2 Persons)
- 2 cups rice flour
- 2 cups coconut milk
- 2 cups water
- 1 teaspoon turmeric powder
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 1/2 cup mung bean sprouts
- 1/2 cup finely chopped scallions
- 1/2 cup finely chopped cilantro
- 1/2 cup finely chopped mint
- 1/2 cup thinly sliced red bell pepper
- 1/2 cup thinly sliced onion
- 1/2 cup cooked pork, chicken, or shrimp
- 1/4 cup vegetable oil
Directions

Step 1
In a large bowl, whisk together the rice flour, coconut milk, water, turmeric powder, salt, and sugar until combined.

Stir in the mung bean sprouts, scallions, cilantro, mint, red bell pepper, onion, and pork, chicken, or shrimp.

Heat a large skillet over medium-high heat. Add the oil and swirl it around to coat the bottom of the skillet.

Pour half the batter into the skillet and quickly swirl it around to evenly spread it out.

Cook for 2-3 minutes until the edges are golden. Flip the banh xeo and cook for another 2-3 minutes until the other side is golden.

Transfer the banh xeo to a plate and repeat with remaining batter.

Serve the banh xeo with lettuce leaves, fresh herbs, and a dipping sauce.
