Vegetable California Sushi Roll

Ingredients (2 Persons)

  • 4 cups cooked sushi rice
  • 4 sheets of nori
  • 1/2 avocado, thinly sliced
  • 1/2 cucumber, thinly sliced
  • 1/4 cup shredded carrots
  • 1/4 cup pickled daikon radish
  • 1/4 cup pickled ginger
  • 1/4 cup sesame seeds

Directions

  • Step 1
    Lay a sheet of nori on a sushi mat. Wet your hands with water and spread 1 cup of cooked sushi rice over the nori, leaving a 1/2 inch border on the far end of the nori.
  • Step 2
    Layer the avocado, cucumber, carrots, daikon radish, pickled ginger, and sesame seeds over the rice.
  • Step 3
    Starting at the end closest to you, roll the sushi away from you and over the filling, pressing gently to shape the roll.
  • Step 4
    Moisten the end of the nori with a little water and press it into the roll to seal it.
  • Step 5
    Cut the roll into 8 even pieces and serve with soy sauce and wasabi.
