Squid Nigiri Sushi

Squid Nigiri Sushi is a popular type of sushi in Japan. It is a small portion of vinegared rice with a piece of cooked squid on top. The squid is usually grilled or fried, and then seasoned with soy sauce, sesame seeds, and other toppings. The combination of the savory ingredients and the sweet and sour taste of the vinegar make this type of sushi an enjoyable treat. It is often served as an appetizer or as a light meal.

Ingredients (2 Persons)

  • 1/2 pound fresh squid, cleaned and prepared
  • 4 cups cooked Japanese short grain rice
  • 1/4 cup rice vinegar
  • 1/2 teaspoon salt
  • 2 sheets nori (seaweed)

Directions

  • Step 1
    In a medium saucepan, combine the squid, 1 cup of water, and a pinch of salt. Bring the mixture to a boil, reduce the heat, and simmer for 5 minutes.
  • Step 2
    Remove the squid from the pan and allow it to cool slightly. Slice it into thin strips.
  • Step 3
    In a medium bowl, combine the cooked rice, rice vinegar, and salt. Mix until the vinegar and salt are evenly distributed.
  • Step 4
    Lay the nori sheets out on a cutting board. Place one-fourth of the rice mixture on each sheet and spread it out evenly. Place one-fourth of the squid strips on top of each sheet of rice.
  • Step 5
    To assemble the sushi, roll the nori sheets up tightly, starting at one end and rolling to the other. Slice each roll into 8-10 pieces and serve.
