Sesame-Ginger Noodle Bowl

  • 2 tablespoons rice vinegar
  • 1 teaspoon honey
  • 6 ounces uncooked soba noodles
  • 2 cups sliced vegetables (such as bell pepper, carrots, and mushrooms)

Directions

  • Step 1
    Heat the sesame oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Stir in the ginger, soy sauce, rice vinegar, and honey. Cook for another minute, stirring to combine.
  • Step 3
    Add the soba noodles and vegetables to the skillet. Cook, stirring frequently, until the vegetables are tender and the noodles are cooked through, about 5-7 minutes.
  • Step 4
    Serve the noodles in individual bowls, topped with sesame seeds and green onions, if desired.
