Coconut Lentil Curry with Spinach

Coconut Lentil Curry with Spinach is a vegan and gluten-free dish that is full of flavor and nutrition. Ingredients (2 Persons)

  • 1 tablespoon coconut oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons grated ginger
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground cardamom
  • 1 (14-ounce) can coconut milk
  • 1 cup vegetable broth
  • 1 cup dried red lentils
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14-ounce) can diced tomatoes
  • 4 cups fresh spinach

Directions

  • Step 1
    Heat the coconut oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  • Step 2
    Stir in the ginger, curry powder, cumin, coriander, turmeric, cinnamon, paprika, and cardamom and cook for 1 minute.
  • Step 3
    Add the coconut milk, vegetable broth, lentils, salt, and pepper. Bring the mixture to a boil, reduce heat to low, and simmer, covered, for 20 minutes.
  • Step 4
    Stir in the diced tomatoes and spinach and cook until the spinach is wilted, about 5 minutes. Taste and adjust seasoning as needed.
