Ingredients (2 Persons)
- 2 tablespoons vegetable oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 teaspoons grated ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 4 cups grated carrots
- 1 (14.5 ounce) can diced tomatoes
- 1/4 cup water
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Directions

Step 1
Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.

Stir in the garlic, ginger, cumin, coriander, cayenne pepper, turmeric, cinnamon, and cardamom. Cook for 1 minute, stirring constantly.

Add the grated carrots, tomatoes, and water. Bring to a simmer and cook until the carrots are tender, about 10 minutes.

Stir in the cilantro and season with salt and pepper. Serve warm.
