Green Curry

Green curry is a popular Thai dish consisting of green curry paste, coconut milk, meat and/or vegetables. It is usually served with jasmine rice. Green curry is a spicy dish, with an intense flavor and aroma. The flavor of green curry comes from a blend of chili peppers, garlic, shallots, galangal, lemongrass, kaffir lime leaves, cumin, coriander, and shrimp paste. The paste is then cooked in coconut milk, along with the meat and/or vegetables, to create a fragrant and flavorful dish. Green curry is often considered to be the spiciest of the Thai curries, but the level of heat can vary depending on the ingredients used.

Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh ginger, minced
  • 2 tablespoons green curry paste
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon lime juice
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 cups sliced mushrooms
  • 1/2 cup fresh basil, chopped

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the garlic and ginger and cook until fragrant, about 1 minute.
  • Step 2
    Stir in the green curry paste and cook for 1 minute.
  • Step 3
    Add the coconut milk, fish sauce, brown sugar, and lime juice. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  • Step 4
    Add the bell pepper, onion, mushrooms, and basil. Simmer for 10 minutes, stirring occasionally, until the vegetables are tender.
  • Step 5
    Serve hot over cooked rice or noodles.
