Rajma Curry

Rajma Curry is an Indian dish made with red kidney beans (rajma) cooked in a spiced tomato-based sauce. It is a popular dish throughout Northern India, especially in the state of Punjab. Rajma curry is typically served with steamed rice, but can also be eaten with roti or naan bread. It is a flavorful and hearty dish that can be made mild or spicy, depending on personal preference.

Ingredients (2 Persons)

  • 2 cups dried kidney beans, soaked overnight
  • 1 tablespoon ghee or oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon black mustard seeds
  • 2 bay leaves
  • 2 cloves
  • 1 cinnamon stick
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper (optional)
  • 1 (15-ounce) can diced tomatoes
  • 1 cup water
  • 1 teaspoon sugar
  • 1 tablespoon fresh lemon juice
  • Salt, to taste

Directions

  • Step 1
    Drain and rinse the soaked kidney beans. Set aside.
  • Step 2
    Heat the ghee or oil in a large saucepan over medium heat. Add the cumin and mustard seeds and cook until they begin to sizzle and pop, about 1 minute.
  • Step 3
    Add the bay leaves, cloves, and cinnamon stick and cook for another 1-2 minutes.
  • Step 4
    Add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for 1 minute more.
  • Step 5
    Stir in the turmeric, coriander, garam masala, paprika, and cayenne pepper (if using). Cook for 1-2 minutes more.
  • Step 6
    Add the tomatoes, water, sugar, and soaked kidney beans to the pot. Bring to a simmer, then reduce the heat to low and cook, covered, for 45 minutes to 1 hour, until the beans are tender.
  • Step 7
    Stir in the lemon juice and season with salt, to taste. Serve hot.
