Vegan Mushroom and Spinach Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons grated ginger
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon curry powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup vegetable broth
  • 1 (14-ounce) can diced tomatoes
  • 2 cups sliced mushrooms
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 4 cups spinach
  • Salt and black pepper, to taste

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, cumin, coriander, turmeric, garam masala, curry powder, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.
  • Step 3
    Add the vegetable broth, diced tomatoes, mushrooms, and chickpeas. Bring the mixture to a simmer, reduce the heat to low, and cook for 10 minutes.
  • Step 4
    Stir in the spinach and season with salt and black pepper, to taste. Cook until the spinach is wilted, about 2 minutes. Serve hot.
