Vietnamese Pho

Ingredients (2 Persons)
- 2 tablespoons vegetable oil
- 2 onions, thinly sliced
- 2 tablespoons freshly grated ginger
- 1 cinnamon stick
- 1 teaspoon whole cloves
- 6 cups vegetable broth
- 2 tablespoons soy sauce
- 2 tablespoons fish sauce
- 2 tablespoons brown sugar
- 1 teaspoon ground coriander
- 1 teaspoon ground cardamom
- 1/2 teaspoon ground fennel
- 1/2 teaspoon ground star anise
- 2 bay leaves
- 1 pound fresh rice noodles
- 2 cups julienned carrots
- 2 cups julienned celery
- 1 cup mung bean sprouts
- 1/2 cup cilantro leaves
- 2 limes, cut into wedges
- 2 jalapenos, sliced
Directions

Step 1
Heat the oil in a large pot over medium-high heat. Add the onions and cook until softened, about 5 minutes. Add the ginger, cinnamon stick, and cloves and cook for 1 minute.

Add the broth, soy sauce, fish sauce, brown sugar, coriander, cardamom, fennel, star anise, and bay leaves and bring to a boil. Reduce the heat to low and simmer for 30 minutes.

Strain the broth, discarding the solids. Return the broth to the pot and bring to a boil over medium-high heat.

Add the noodles and cook until softened, about 5 minutes. Add the carrots, celery, and bean sprouts and cook for 3 minutes.

Divide the soup among 4 bowls and garnish with cilantro leaves, lime wedges, and jalapeno slices.
