Chicken Curry

Chicken Curry is a popular dish from South Asia, which is usually made with a variety of spices and herbs. It is usually cooked in a sauce of onions, garlic, ginger, tomato, and other spices. The chicken is usually marinated in a combination of yogurt, lemon juice, garlic, and other spices prior to cooking. The curry is usually served with rice or naan bread. There are many variations of chicken curry, with the most popular being tikka masala, korma, and jalfrezi.

Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 2 pounds skinless, boneless chicken breasts, cut into 1-inch cubes
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons grated fresh ginger
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon ground black pepper
  • 1 can (14-ounces) coconut milk
  • 1/2 cup chicken broth
  • 1 large tomato, diced
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until it is golden brown, about 5 minutes.
  • Step 2
    Add the onion, garlic, and ginger to the skillet and cook until the onion is tender, about 5 minutes.
  • Step 3
    Stir in the curry powder, cumin, turmeric, coriander, cayenne pepper, and black pepper. Cook for 1 minute, stirring constantly.
  • Step 4
    Pour in the coconut milk and chicken broth and bring the mixture to a simmer. Reduce the heat to low and cook for 10 minutes, stirring occasionally.
  • Step 5
    Add the tomato and cook until the chicken is cooked through, about 5 minutes. Stir in the cilantro and serve.
