Vegan Chickpea and Spinach Curry

Vegan Chickpea and Spinach Curry is an easy and delicious vegan curry recipe that can be made with just a few simple ingredients. Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons grated ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 (15 ounce) cans chickpeas, drained and rinsed
  • 1 (14 ounce) can diced tomatoes
  • 1 (14 ounce) can coconut milk
  • 3 cups fresh spinach, chopped
  • Salt, to taste
  • Fresh cilantro, for garnish

Directions

  • Step 1
    Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, cumin, coriander, turmeric, paprika, cinnamon, cardamom, black pepper, and red pepper flakes (if using) and cook for 1 minute more.
  • Step 3
    Stir in the chickpeas, diced tomatoes, and coconut milk. Bring the mixture to a simmer and cook for 15 minutes, stirring occasionally.
  • Step 4
    Add the spinach and cook for 5 minutes more, until the spinach has wilted.
  • Step 5
    Taste and season with salt, as needed. Serve garnished with fresh cilantro.
