Vegan Lentil Curry

  • 1 cup dry green lentils
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 (14-ounce) can coconut milk
  • 1 cup vegetable broth
  • 1 (14-ounce) can diced tomatoes
  • 1/2 cup frozen peas

Directions

  • Step 1
    Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Add the ginger, curry powder, cumin, coriander, turmeric, and cayenne pepper and cook for 1 minute, until fragrant.
  • Step 3
    Add the lentils, coconut milk, vegetable broth, and diced tomatoes to the pot. Bring the mixture to a boil, then reduce the heat to low and cook for 20-25 minutes, until the lentils are tender.
  • Step 4
    Stir in the frozen peas and cook for an additional 5 minutes, until heated through.
