Ingredients (2 Persons)

  • 2 cups sushi rice
  • 4 tablespoons rice vinegar
  • 4 tablespoons sugar
  • 4 tablespoons sake
  • 4 tablespoons salt
  • 4 sheets nori
  • 1 cucumber, peeled and julienned
  • 1 carrot, peeled and julienned
  • 1 avocado, peeled, pitted, and sliced

Directions

  • Step 1
Rinse the sushi rice in a fine mesh strainer until the water runs clear. Transfer the rice to a medium saucepan and add 2 cups of water. Bring to a boil over medium-high heat, then reduce the heat to low, cover the pan, and simmer for 20 minutes.
  • Step 2
In a small bowl, combine the rice vinegar, sugar, sake, and salt. Stir until the sugar and salt are dissolved.
  • Step 3
Once the rice is cooked, transfer it to a large bowl and pour the vinegar mixture over it. Gently fold the mixture together until the rice is evenly coated.
  • Step 4
To assemble the sushi, lay a sheet of nori on a bamboo sushi mat. Spread a thin layer of the sushi rice over the nori, leaving a 1-inch border on one side. Arrange the cucumber, carrot, and avocado in a line down the center of the rice.
  • Step 5
Using the bamboo mat, roll the sushi into a tight cylinder, pressing firmly to seal the edge. Cut the roll into 8 pieces with a sharp knife and serve.
