Vegan Potato and Spinach Curry

Ingredients (2 Persons)

  • 1 tablespoon oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon sea salt
  • 4 cups potatoes, diced
  • 4 cups vegetable broth
  • 1 can (15 ounces) coconut milk
  • 3 cups spinach, chopped

Directions

  • Step 1
    Heat the oil in a large pot over medium-high heat. Add the onion and garlic and cook for 4-5 minutes until softened.
  • Step 2
    Add the ginger, cumin, coriander, turmeric, cayenne (if using), and salt. Cook for 1 minute, stirring constantly.
  • Step 3
    Add the potatoes and vegetable broth to the pot and bring to a boil. Reduce the heat and simmer for 10-15 minutes, until the potatoes are tender.
  • Step 4
    Stir in the coconut milk and spinach and cook for 5 minutes until the spinach is wilted and the sauce is thick and creamy.
