  • 1 teaspoon ground coriander

  • 1 teaspoon garam masala
  • 1 teaspoon red pepper flakes
  • 1 (15 ounce) can diced tomatoes
  • 2 cups vegetable broth
  • 2 cups dried lentils
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

  • Step 1
    Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and cook until softened, about 3 minutes.

    Stir in the cumin, coriander, curry powder, garam masala, and red pepper flakes and cook for 1 minute.
  • Step 3
    Add the tomatoes, vegetable broth, lentils, salt, and black pepper to the pot and stir to combine. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 30 minutes, stirring occasionally, until the lentils are tender.
  • Step 4
    Stir in additional salt and pepper to taste, if desired, and serve hot.
