Roasted Vegetable Curry

Ingredients (2 Persons)

  • 2 sweet potatoes, diced
  • 2 carrots, peeled and diced
  • 1 red onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (14.5 ounces) chickpeas, drained and rinsed
  • 1/2 cup vegetable broth
  • 1/4 cup fresh cilantro, chopped

Directions

  • Step 1
    Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Step 2
    Add sweet potatoes, carrots, red onion, and bell pepper to the baking sheet and toss with 2 tablespoons of oil, salt, and pepper.
  • Step 3
    Roast vegetables in the preheated oven for 25-30 minutes, stirring once halfway through.
  • Step 4
    Heat a large skillet over medium heat. Add 1 tablespoon of oil and the garlic and cook for 1 minutes.
  • Step 5
    Stir in the curry powder, cumin, ginger, turmeric, smoked paprika, chili powder, and cayenne pepper. Cook for 1-2 minutes, until the spices are fragrant.
  • Step 6
    Add the diced tomatoes, chickpeas, vegetable broth, and roasted vegetables to the skillet. Bring the mixture to a simmer and cook for 10-15 minutes, until the sauce has thickened and the flavors have melded together.
  • Step 7
    Stir in the cilantro and season with salt and pepper to taste. Serve warm over rice, quinoa, or your favorite grain.
