Malaysian Satay Chicken Skewers

Ingredients (2 Persons)

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup coconut milk
  • 2 tablespoons brown sugar
  • 2 tablespoons fish sauce
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon chili powder
  • juice of 1 lime

Directions

  • Step 1
    In a medium bowl, mix together the coconut milk, brown sugar, fish sauce, coriander, cumin, turmeric, ginger, garlic powder, cloves, cinnamon, cardamom, chili powder, and lime juice. Add the cubed chicken and stir to combine.
  • Step 2
    Cover and refrigerate for at least 4 hours (or overnight).
  • Step 3
    Preheat the grill to medium-high heat.
  • Step 4
    Thread the chicken cubes onto the skewers and discard the marinade.
  • Step 5
    Grill the chicken skewers for 5-7 minutes, turning occasionally, until cooked through.
  • Step 6
    Serve with your favorite sides and sauces.
