Vegetable and Tofu Pad Thai

Ingredients (2 Persons)
- 8 ounces pad thai noodles
- 1/4 cup vegetable oil
- 1 block firm tofu, drained and cubed
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon chili garlic sauce
- 1 teaspoon ground ginger
- 1 red bell pepper, thinly sliced
- 1 cup shredded cabbage
- 1 cup shredded carrots
- 2 green onions, thinly sliced
- 1/4 cup chopped peanuts
- Lime wedges for garnish
Directions

Step 1
Bring a large pot of water to a boil. Cook the pad thai noodles according to package directions. Drain and set aside.

Heat the oil in a large skillet over medium-high heat. Add the tofu and cook until golden brown, about 5 minutes. Add the garlic and cook for 1 minute more.

Add the soy sauce, brown sugar, chili garlic sauce, and ginger to the skillet. Stir to combine, then add the bell pepper, cabbage, and carrots. Cook for 3-4 minutes, or until the vegetables are tender.

Stir in the cooked noodles and green onions. Cook for 1-2 minutes more, or until everything is heated through.

Garnish with chopped peanuts and lime wedges before serving.
