Vegetarian Sweet Potato Curry

  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon cayenne pepper
  • 1 (14-ounce) can diced tomatoes
  • 2 cups vegetable broth
  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 1 (14-ounce) can light coconut milk
  • 1 (15-ounce) can chickpeas, drained and rinsed

Directions

  • Step 1
    Heat the olive oil in a large saucepan over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in the garlic, ginger, cumin, coriander, turmeric, garam masala, and cayenne pepper, and cook for 1 minute more.
  • Step 2
    Add the diced tomatoes, vegetable broth, and sweet potatoes. Bring to a boil, reduce heat to low, and simmer for 15 minutes, until the sweet potatoes are tender.
  • Step 3
    Stir in the coconut milk and chickpeas and cook for 5 minutes more, until heated through.
  • Step 4
    Serve over cooked rice, if desired.
