Vegan Tofu Sushi Roll

Ingredients (2 Persons)

  • 1 block of extra firm tofu, drained and sliced into strips
  • 1/2 cup cooked brown rice
  • 2 sheets nori seaweed
  • 1/4 cup diced cucumber
  • 1/4 cup diced carrots
  • 1/4 cup diced avocado

Directions

  • Step 1
    Lay out a sheet of nori seaweed on a clean surface. Spread the cooked brown rice over the nori, leaving a 1-inch border on one side of the nori.
  • Step 2
    Arrange the tofu strips, cucumber, carrots, and avocado in a line over the rice. Be sure to leave the 1-inch border empty.
  • Step 3
    Fold the empty border of the nori over the filling, pressing down lightly to secure it. Roll the sushi away from you, using the mat to help keep it tight.
  • Step 4
    Repeat with the remaining nori and ingredients. Cut each roll into 6-8 pieces with a sharp knife.
