Vegan Spinach Curry

Ingredients (2 Persons)

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1 (14-ounce) can coconut milk
  • 2 cups vegetable broth
  • 2 cups spinach, chopped
  • 1 sweet potato, peeled and diced
  • 1 (14-ounce) can chickpeas, drained and rinsed

Directions

  • Step 1
    Heat a large pot over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Stir in the ginger, curry powder, cumin, chili powder, turmeric, coriander, cayenne pepper, cinnamon, and cardamom. Cook for 1-2 minutes, until the spices are fragrant.
  • Step 3
    Add the coconut milk and vegetable broth to the pot and stir to combine. Bring the mixture to a simmer and cook for 10 minutes.
  • Step 4
    Add the spinach, sweet potato, and chickpeas to the pot. Simmer for 10-15 minutes, until the vegetables are tender.
  • Step 5
    Serve the curry with cooked basmati rice or naan, if desired.
