  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 (14-ounce) can diced tomatoes
  • 1 cup vegetable broth
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium heat. Add the onion and cook for 5 minutes, or until softened.

    Add the butternut squash, garlic, curry powder, cumin, coriander, and turmeric to the skillet. Cook for 5 minutes, stirring occasionally.

    Stir in the cilantro and season with salt and pepper to taste. Serve hot.
