Vegetable Fried Rice

Ingredients (2 Persons)
- 4 cups cooked, cooled rice
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 cups frozen peas and carrots
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons freshly chopped parsley (optional)
Directions

Heat the vegetable oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

Stir in the cooked rice and soy sauce and cook until the rice is heated through and the vegetables are tender, about 5 minutes.
