Vegetable Fried Rice

Vegetable Fried Rice is a dish that is popular in East and Southeast Asian cuisines. Ingredients (2 Persons)

  • 4 cups cooked, cooled rice
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 cups frozen peas and carrots
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons freshly chopped parsley (optional)

Directions

  • Step 1
    Heat the vegetable oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Add the carrots and frozen peas and carrots and cook until the vegetables are tender, about 5 minutes.
  • Step 3
    Stir in the cooked rice and soy sauce and cook until the rice is heated through and the vegetables are tender, about 5 minutes.
  • Step 4
    Stir in the sesame oil and parsley, if using. Serve hot.
