Vegetable Maki Sushi

Ingredients (2 Persons)

  • 4 cups cooked sushi rice
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 4 sheets nori (seaweed)
  • 1 small cucumber, thinly sliced
  • 1/2 large carrot, julienned
  • 1 small avocado, thinly sliced
  • 2 tablespoons sesame seeds

Directions

  • Step 1
    In a medium bowl, combine the cooked sushi rice, rice vinegar, sugar, and salt. Stir to combine.
  • Step 2
    Lay a sheet of nori on a sushi mat. Spread 1 cup of the sushi rice over the nori, leaving a 1-inch border on the top edge.
  • Step 3
    Arrange the cucumber, carrot, avocado, and sesame seeds in a line across the center of the sushi rice. Roll up the sushi mat, making sure to keep the filling tight inside the roll.
  • Step 4
    Repeat with the remaining ingredients to make 4 rolls.
  • Step 5
    Cut each roll into 8 pieces, using a sharp knife.
