Chinese Orange Chicken

Ingredients (2 Persons)

  • 4 boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1/2 cup orange juice
  • 1/3 cup light soy sauce
  • 1/4 cup dark brown sugar
  • 1/4 cup white vinegar
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 1/3 cup cornstarch

Directions

  • Step 1
    In a medium bowl, combine the flour, baking powder, baking soda, and salt. Add the chicken cubes and toss to coat.
  • Step 2
    Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken cubes and cook until golden brown, about 5 minutes.
  • Step 3
    Meanwhile, in a small bowl, whisk together the orange juice, soy sauce, brown sugar, vinegar, ginger, and garlic powder.
  • Step 4
    Add the orange juice mixture to the skillet and bring to a simmer. Simmer for 10 minutes, stirring occasionally.
  • Step 5
    In a small bowl, whisk together the cornstarch and 2 tablespoons of cold water. Pour the cornstarch mixture into the skillet and stir until thickened, about 1 minute.
