Asian-Style Lettuce Wraps

- 2 tablespoons vegetable oil
- 1 pound ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1/2 cup mushrooms, finely chopped
- 1 tablespoon freshly grated ginger
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 1 teaspoon sesame oil
- 1/4 teaspoon red pepper flakes
- 1/4 cup chopped green onions
- 1 head butter lettuce, leaves separated

Heat the oil in a large skillet over medium-high heat. Add the ground turkey and cook until it is no longer pink, breaking it up into small pieces as it cooks.

Add the onion, garlic, and mushrooms to the skillet and cook until the vegetables are tender, about 5 minutes.

Stir in the ginger, hoisin sauce, soy sauce, rice wine vinegar, sesame oil, and red pepper flakes. Cook for 1-2 minutes, until the mixture is fragrant.

Stir in the green onions and cook for 1 minute.

Remove the skillet from the heat. To assemble the lettuce wraps, spoon the turkey mixture into the lettuce leaves and serve.
