Vegetarian Sushi Pizza

Ingredients (2 Persons)

  • 1/2 cup cooked sushi rice, cooled
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon sugar
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon salt
  • 2 nori sheets, cut into quarters
  • 1/4 cup avocado, thinly sliced
  • 1/4 cup cucumber, thinly sliced
  • 1/4 cup red bell pepper, thinly sliced
  • 1/4 cup carrots, julienned
  • 1/4 cup pickled ginger, thinly sliced

Directions

  • Step 1
    In a small bowl, mix together the cooked sushi rice, rice vinegar, sugar, sesame oil, and salt until combined.
  • Step 2
    Lay the nori sheets on a flat surface. Spread the sushi rice evenly over each sheet, leaving a 1-inch border around the edges.
  • Step 3
    Top the rice with the avocado, cucumber, bell pepper, carrots, and pickled ginger.
  • Step 4
    Carefully roll the nori sheets into tight cylinders. Slice each cylinder into 4 pieces and serve.
