Mango and Coconut Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons freshly grated ginger
  • 2 tablespoons red curry paste
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground cinnamon
  • 1 (14 ounce) can coconut milk
  • 1 (14 ounce) can diced tomatoes
  • 2 mangoes, peeled and diced
  • 1/2 cup fresh cilantro, chopped

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium-high heat. Add the onion, garlic, and ginger and cook for 5 minutes, until the onions are softened.
  • Step 2
    Stir in the curry paste, turmeric, coriander, cumin, cardamom, and cinnamon and cook for 1 minute, until the spices are fragrant.
  • Step 3
    Pour in the coconut milk and diced tomatoes and bring the mixture to a simmer. Simmer until the sauce has thickened, about 10 minutes.
  • Step 4
    Add the mangoes and simmer for another 5 minutes, until the mangoes are tender.
  • Step 5
    Remove the skillet from the heat and stir in the fresh cilantro. Serve over cooked rice or quinoa.
