Pork Vindaloo Curry

Ingredients (2 Persons)

  • 2 pounds pork, cubed
  • 3 tablespoons olive oil
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • 2 tablespoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons ground turmeric
  • 2 teaspoons ground cayenne pepper
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cloves
  • 1 teaspoon ground fenugreek
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 (14.5 ounce) can diced tomatoes
  • 1/2 cup white vinegar
  • 1/4 cup white sugar

Directions

  • Step 1
    Heat olive oil in a large skillet over medium heat. Cook and stir pork cubes in the hot oil until browned, about 5 minutes.
  • Step 2
    Add onions and garlic; cook until the onions are golden, about 5 minutes. Stir in ginger, cumin, coriander, turmeric, cayenne pepper, cinnamon, cardamom, cloves, fenugreek, black pepper, and salt.
  • Step 3
    Mix diced tomatoes, vinegar, and sugar into the pork mixture. Reduce heat to low, cover skillet, and simmer until the pork is tender, about 30 minutes.
  • Step 4
    Uncover skillet and continue simmering until the sauce thickens, about 15 minutes more.
