Egg Drop Soup

Egg drop soup is a traditional Chinese soup made with beaten eggs, chicken broth, and vegetables. It is often served with various other ingredients such as mushrooms, tofu, and corn. Ingredients (2 Persons)

  • 2 quarts chicken broth
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 2 eggs, beaten
  • 2 green onions, thinly sliced

Directions

  • Step 1
    In a large pot, heat the chicken broth over medium-high heat. Add the ginger and garlic powder and bring the broth to a simmer.
  • Step 2
    In a small bowl, whisk together the cornstarch and cold water until smooth. Slowly add the cornstarch mixture to the simmering broth, stirring constantly.
  • Step 3
    Reduce the heat to low and slowly add the beaten eggs, stirring constantly in a circular motion. Cook for 1-2 minutes, until the eggs are cooked through.
  • Step 4
    Garnish with green onions and serve hot.
