Vegetarian Sushi Sandwich

Ingredients (2 Persons)

  • 4 slices of bread
  • 1/4 cup cream cheese, softened
  • 1/4 cup cooked sushi rice
  • 1/4 cup cucumber, diced
  • 1/4 cup carrots, diced
  • 1/4 cup avocado, diced
  • 1/4 cup nori seaweed, cut into thin strips

Directions

  • Step 1
    Spread cream cheese on each slice of bread.
  • Step 2
    Top 2 slices with cooked sushi rice, cucumber, carrots, avocado, and nori strips.
  • Step 3
    Top with remaining slices of bread and press gently to seal.
  • Step 4
    Cut sandwiches in half and serve.
