Coconut Fish Curry

Ingredients (2 Persons)
- 2 pounds white fish fillets, cut into cubes
- 2 tablespoons vegetable oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 1 (14-ounce) can coconut milk
- 1/2 cup water
- 1 (14-ounce) can diced tomatoes
- 1/2 cup frozen peas
Directions

Step 1
Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.

Add the garlic, ginger, curry powder, cumin, coriander, turmeric, and cayenne pepper to the skillet and cook for 1 minute, until fragrant.

Add the coconut milk, water, and diced tomatoes to the skillet. Bring the mixture to a simmer and cook for 5 minutes.

Add the fish cubes to the skillet and simmer for another 5 minutes, until the fish is cooked through.

Stir in the frozen peas and cook for 1-2 minutes, until heated through.
