Pumpkin Curry

Ingredients (2 Persons)
- 2 tablespoons vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1 (15-ounce) can pumpkin puree
- 1 (14.5-ounce) can diced tomatoes
- 1 (14-ounce) can coconut milk
- 1/4 cup vegetable broth
- 1 teaspoon brown sugar
- 2 tablespoons fresh cilantro, chopped
- Salt and pepper, to taste
Directions

Step 1
Heat oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and ginger and cook for 1 minute.

Add curry powder, cumin, coriander, turmeric, cinnamon, and cayenne pepper and cook for 1 minute, until fragrant.

Add pumpkin puree, diced tomatoes, coconut milk, vegetable broth, and brown sugar and stir to combine. Bring to a boil, then reduce heat and simmer for 10 minutes.

Stir in cilantro and season with salt and pepper to taste. Serve curry over cooked rice or noodles, if desired.
