Indonesian Gado Gado

Indonesian Gado Gado is a popular vegetable dish that originated in Indonesia. It consists of boiled vegetables such as potatoes, long beans, bean sprouts, and cabbage, served with a spicy peanut sauce. The vegetables are usually served cold, and the sauce is often made with chili, garlic, ginger, and tamarind paste. It is usually served as a side dish or a light meal. Ingredients (2 Persons)

  • 1 large head of Romaine lettuce, chopped
  • 1/2 cup of bean sprouts
  • 1/2 cup of boiled potatoes, cubed
  • 1/2 cup of blanched green beans
  • 1/2 cup of blanched cauliflower florets
  • 1/2 cup of boiled eggs, halved
  • 1/4 cup of crushed peanuts
  • 1/4 cup of diced red onion
  • 1/4 cup of sliced cucumber
  • 1/4 cup of fried tofu cubes
  • 2 tablespoons of vegetable oil
  • 1 tablespoon of minced garlic
  • 1 teaspoon of minced fresh ginger
  • 1 teaspoon of tamarind paste
  • 1/4 teaspoon of ground turmeric
  • 1/4 teaspoon of ground coriander
  • 1/2 teaspoon of sugar
  • 1/2 teaspoon of salt

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the garlic and ginger and cook until fragrant, about 1 minute.
  • Step 2
    Add the tamarind paste, turmeric, coriander, sugar, and salt and stir to combine.
  • Step 3
    Add the potatoes, green beans, cauliflower, and red onion to the skillet and cook until the vegetables are tender, about 5 minutes.
  • Step 4
    Add the lettuce, bean sprouts, eggs, peanuts, cucumber, and fried tofu to the skillet and toss to combine. Cook for 2 minutes more, until the lettuce is wilted and everything is heated through.
  • Step 5
    Serve the gado gado warm and top with more crushed peanuts, if desired.
