Ingredients (2 Persons)

  • 1 tablespoon vegetable oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons Thai red curry paste
  • 1 (14 ounce) can coconut milk
  • 1 cup vegetable broth
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 (14 ounce) can diced tomatoes
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat the oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Stir in the red curry paste and cook for 1 minute. Pour in the coconut milk and vegetable broth and bring the mixture to a simmer.
  • Step 3
    Add the bell pepper, zucchini, tomatoes, fish sauce, sugar, and red pepper flakes. Simmer for 10 minutes.
  • Step 4
    Stir in the cilantro and serve. Enjoy!
