Vegetarian Dragon Roll Sushi

Ingredients (2 Persons)

  • 4 ounces sushi-grade tuna, diced
  • 2 cups cooked short-grain rice
  • 2 tablespoons rice vinegar
  • 1 avocado, sliced
  • 4 sheets of nori
  • 4 tablespoons sesame seeds

Directions

  • Step 1
    In a medium bowl, combine the tuna and cooked rice. Add the rice vinegar and mix until evenly distributed.
  • Step 2
    Lay one sheet of nori on a sushi rolling mat. Spread 1/2 cup of the rice and tuna mixture onto the nori sheet.
  • Step 3
    Lay the avocado slices on top of the rice and tuna. Sprinkle 1 tablespoon of sesame seeds over the avocado.
  • Step 4
    Using the sushi rolling mat, roll the nori sheet into a tight log. Use the mat to help shape the roll into a cylindrical shape.
  • Step 5
    Cut the roll into 8 pieces with a sharp knife. Repeat the process with the remaining ingredients.
