Korean Kimchi Soup

- 1 pound beef brisket, cut into thin strips
- 1 pound kimchi, chopped

- 2 tablespoons soy sauce
- 2 tablespoons sesame oil
- 6 cups beef broth
- 2 tablespoons mirin (Japanese sweet rice wine)
- 1 teaspoon sugar
- 3 scallions, thinly sliced
- 1/2 cup fresh cilantro leaves, chopped

In a large pot over medium-high heat, add the beef brisket and sear for 2 minutes on each side.

Add the kimchi, gochujang, garlic, ginger, soy sauce, and sesame oil. Stir to combine and cook for 3-4 minutes.

Add the beef broth, mirin, sugar, and scallions. Bring the mixture to a boil, then reduce the heat to low. Simmer for 20 minutes.

Add the cilantro leaves and stir to combine. Simmer for another 5 minutes, then serve hot.
