Vegan Cauliflower and Potato Curry

Ingredients (2 Persons)

  • 1 head cauliflower (cut into small florets)
  • 2 potatoes (diced)
  • 1 onion (diced)
  • 3 cloves garlic (minced)
  • 1 tablespoon ginger (grated)
  • 2 tablespoons vegetable oil
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1/2 cup coconut milk
  • Salt and pepper (to taste)
  • 1/4 cup cilantro (chopped)
  • Cooked basmati rice (for serving)

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, and ginger and cook until the onion is softened, about 5 minutes.
  • Step 2
    Add the cauliflower and potatoes and cook for 2 minutes. Stir in the cumin, coriander, turmeric, garam masala, paprika, and cayenne pepper (if using) and cook for 1 minute more.
  • Step 3
    Stir in the diced tomatoes, chickpeas, and coconut milk. Bring to a simmer and cook for 15-20 minutes, until the vegetables are tender.
  • Step 4
    Season with salt and pepper to taste. Garnish with chopped cilantro and serve over cooked basmati rice.

This vegan curry is delicious & nutritious! A perfect combination of cauliflower, potatoes & spices all cooked in a coconut milk curry base. A curry we'll make again and again. Yum!
