Malaysian Laksa
Malaysian Laksa is a spicy noodle soup dish that is popular in Malaysia and Singapore. Ingredients (2 Persons)
- 1 (14 ounce) can coconut milk
- 2 tablespoons red curry paste
- 2 tablespoons fish sauce
- 1 teaspoon brown sugar
- 1/2 teaspoon ground turmeric
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 (14.5 ounce) can diced tomatoes
- 4 cups vegetable broth
- 8 ounces medium shrimp, peeled and deveined
- 3 tablespoons chopped fresh cilantro
- 1 (8 ounce) package vermicelli rice noodles
Directions

Step 1
Heat the coconut milk, curry paste, fish sauce, brown sugar, turmeric, garlic, and onion in a large pot over medium heat. Cook and stir until the onion is softened and the curry paste and turmeric have blended into the coconut milk, about 5 minutes.

Pour the tomatoes and vegetable broth into the pot and bring to a boil. Reduce heat to low and simmer for 10 minutes.

Stir the shrimp into the pot and simmer until they turn pink, about 3 minutes. Stir in the cilantro and remove from heat.

Bring a separate pot of water to a boil. Place the vermicelli noodles in the boiling water and cook according to the package instructions, about 3 minutes. Drain the noodles and divide among 4 serving bowls.
