Zucchini Curry

Zucchini curry is a savory dish made with zucchini, curry powder, and other spices. It is a popular side dish or main course in Indian cuisine. Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 large zucchini, diced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (14.5 ounces) coconut milk
  • 1/4 cup fresh cilantro, chopped

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium heat. Add the onion and cook for about 5 minutes, until the onion is softened.
  • Step 2
    Add the garlic, ginger, cumin, coriander, turmeric, garam masala, and cayenne pepper (if using). Cook for 1-2 minutes, until the spices are fragrant.
  • Step 3
    Add the zucchini and diced tomatoes to the skillet. Simmer for 15 minutes, stirring occasionally.
  • Step 4
    Stir in the coconut milk and bring the mixture to a simmer. Simmer for 10 minutes, stirring occasionally, until the sauce has thickened.
  • Step 5
    Stir in the fresh cilantro and serve hot.
