Lentil & Quinoa Curry

Ingredients (2 Persons)
- 1 cup dry lentils
- 1/2 cup dry quinoa
- 2 tablespoons olive oil
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 2 teaspoons curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon smoked paprika
- 1 can (14.5 ounces) diced tomatoes
- 1 can (14.5 ounces) coconut milk
- 2 cups vegetable broth
- 1/2 teaspoon salt, or to taste
Directions

Step 1
In a medium saucepan, combine the lentils and quinoa with 2 cups of water. Bring to a boil, reduce the heat to low, and simmer for 15 minutes, or until the lentils and quinoa are cooked through.

Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.

Stir in the cumin, curry powder, turmeric, and paprika and cook, stirring constantly, for 1 minute.

Add the diced tomatoes, coconut milk, vegetable broth, and salt. Bring to a simmer and cook for 10 minutes.

Stir in the cooked lentils and quinoa and cook until heated through, about 5 minutes. Serve warm.
