Spicy Tofu Stir-Fry

Spicy Tofu Stir-Fry is a flavorful and versatile dish that can be enjoyed as a main course or side dish. This vegan dish is full of flavour and comes together quickly, making it an ideal weeknight meal. Made with soft tofu, bell peppers, garlic, and a spicy sauce, this stir-fry is sure to please everyone in the family. Serve it over rice or noodles for a complete meal.

Ingredients (2 Persons)

  • 1 package extra-firm tofu, drained and cubed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon chili paste
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup vegetable broth
  • 1 small red onion, diced
  • 1 red bell pepper, diced
  • 1 cup broccoli florets
  • 1 cup sliced mushrooms
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium-high heat. Add the tofu cubes and cook until golden brown, about 5 minutes.
  • Step 2
    Add the garlic, ginger, soy sauce, chili paste, and pepper flakes to the skillet. Stir to combine and cook for 1-2 minutes, until fragrant.
  • Step 3
    Add the vegetable broth, red onion, bell pepper, broccoli, and mushrooms. Stir to combine and cook for 8-10 minutes, until the vegetables are tender and the sauce is thickened.
  • Step 4
    Stir in the fresh cilantro and serve hot.
