Korean-Style Beef and Kimchi Stew

  • 2 cups kimchi, chopped
  • 2 cups beef broth

  • 1/4 cup sesame seeds

Directions

  • Step 1
    Heat a large pot over medium-high heat. Add the ground beef and cook until it is no longer pink, breaking it up into small pieces as it cooks.
  • Step 2
    Add the onion, garlic, ginger, and sesame oil to the pot and cook until the vegetables are tender, about 5 minutes.
  • Step 3
    Stir in the soy sauce, brown sugar, and kimchi. Cook for 1-2 minutes, until the flavors have melded together.
  • Step 4
    Add the beef broth and bring the mixture to a simmer. Cook for 10-15 minutes, until the sauce has thickened and the flavors have melded together.
  • Step 5
    Stir in the scallions and sesame seeds. Serve hot.
