Vegan Red Bean Curry

Ingredients (2 Persons)

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon curry powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper
  • 2 (14.5 oz) cans diced tomatoes
  • 1 (15 oz) can red kidney beans, drained and rinsed
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 cup coconut milk
  • Salt and pepper, to taste

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Stir in the garlic, cumin, coriander, curry powder, garam masala, turmeric, cinnamon, and cayenne pepper. Cook for 1-2 minutes, until the spices are fragrant.
  • Step 3
    Add the diced tomatoes, red kidney beans, chickpeas, and coconut milk. Bring the mixture to a boil, then reduce the heat to low and simmer for 15-20 minutes, stirring occasionally.
  • Step 4
    Season with salt and pepper, to taste. Serve with cooked rice or naan bread.
