Thai Chicken Soup with Coconut Milk

Ingredients (2 Persons)

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons freshly grated ginger
  • 2 teaspoons curry powder
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1 (13.5 ounce) can coconut milk
  • 2 cups chicken broth
  • 1 red bell pepper, diced
  • 1/2 cup sliced carrots
  • 1/2 cup frozen peas
  • 3 tablespoons fish sauce

Directions

  • Step 1
    Heat the olive oil in a large pot over medium heat. Add the diced chicken and cook until it is lightly browned, about 5 minutes.
  • Step 2
    Add the onion, garlic, ginger, curry powder, turmeric, cumin, coriander, and cayenne pepper to the pot and cook for 1-2 minutes, until the spices are fragrant.
  • Step 3
    Stir in the coconut milk, chicken broth, bell pepper, carrots, and frozen peas and bring the mixture to a simmer. Cook for 10 minutes, until the vegetables are tender.
  • Step 4
    Stir in the fish sauce and season with salt and pepper to taste. Cook for 1-2 minutes before serving.
