Chicken Korma Curry

Ingredients (2 Persons)

  • 2 pounds boneless, skinless chicken breasts, cubed
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons garam masala
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cardamom
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 (14-ounce) can diced tomatoes
  • 1 (14-ounce) can coconut milk
  • 1/4 cup plain Greek yogurt

Directions

  • Step 1
    Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, until the chicken is cooked through.
  • Step 2
    Add the onion and garlic and cook for 3-4 minutes, until the onion is softened.
  • Step 3
    Stir in the ginger, garam masala, coriander, cumin, turmeric, cardamom, paprika, and cayenne pepper. Cook for 1-2 minutes, until the spices are fragrant.
  • Step 4
    Stir in the diced tomatoes, coconut milk, and yogurt. Bring the mixture to a simmer and cook for 10-15 minutes, until the sauce has thickened.

Delicious Chicken Korma Curry! Very flavorful and full of spices. Very easy to make and goes great with basmati rice! Highly recommend!
