Spicy Potato Curry

Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon garam masala
  • 4 large potatoes, peeled and cut into 1-inch cubes

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Stir in the ginger, turmeric, cumin, coriander, cayenne pepper, and garam masala and cook for 1 minute until the spices are fragrant.
  • Step 3
    Add the potatoes and stir to coat in the spices. Pour in the water and bring to a simmer. Reduce the heat and simmer for 15-20 minutes, until the potatoes are tender and the sauce has thickened.
  • Step 4
    Serve the curry over cooked basmati rice and garnish with fresh cilantro and a dollop of yogurt.
